Ingredients

Makes approximately 24 crackers

  • ½ cup whole wheat flour
  • ¼ cup jowar (sorghum) flour
  • ¼ tsp salt
  • ⅛ tsp baking soda
  • ½ tbsp kasuri methi (dried fenugreek leaves)
  • ½ tsp red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp turmeric powder
  • ¼ tsp carom seeds (ajwain)
  • 1 tsp cumin seeds
  • 1 tbsp sesame seeds
  • A pinch of hing (asafoetida)
  • ½ tsp chaat masala
  • 2 tbsp ghee, butter, or oil
  • ⅛ cup water (adjust as needed)
  • Melted ghee or butter, for brushing

How to Make Baked Crackers

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the whole wheat flour, jowar flour, baking soda, salt, and all the spices and seeds.
  3. Add the ghee (or butter/oil) and rub it into the flour mixture.
  4. Gradually add water and knead into a firm dough.
  5. Cover the dough with a damp kitchen towel and let it rest for 10–15 minutes.
  6. Roll the dough thinly between sheets of baking paper.
  7. Cut into your preferred cracker shapes and prick each cracker with a fork.
  8. Brush both sides lightly with melted ghee or butter.
  9. Arrange the crackers on a parchment-lined baking tray and bake for 15–17 minutes, or until golden brown and crisp.
  10. Cool completely on a wire rack before storing in an airtight container.

Tips for Perfect Crispy Crackers

  • Roll the dough evenly for uniformly crisp crackers.
  • Docking the crackers with a fork helps prevent puffing during baking.
  • Let the crackers cool completely before storing to maintain their crunch.
  • Enjoy them with hummus, yogurt dip, salsa, or your favorite spread.
