Healthy Homemade Nuts & Seeds Cookies
These wholesome nuts and seeds cookies are made with whole wheat flour, jowar, oats, and a nutritious mix of roasted nuts and seeds. Lightly flavored with cardamom and vanilla, they’re a delicious snack for tea time or a healthier alternative to store-bought cookies.
Ingredients
- 30g jowar flour
- 30g oat flour
- 60g whole wheat flour
- 30g roasted nuts and seeds powder
- 1½ tsp baking powder
- A pinch of salt
- 1 tsp cardamom powder
- 1 tsp vanilla extract
- 100g desi khand or caster sugar
- 85g unsalted butter or ghee, melted
- 60–70ml milk (adjust as needed)
How to Make Nuts & Seeds Cookies
- Preheat the oven to 170°C (340°F).
- In a mixing bowl, whisk the melted ghee (or butter) with desi khand or sugar until well combined and slightly creamy.
- Add the jowar flour, oat flour, whole wheat flour, roasted nuts and seeds powder, baking powder, salt, and cardamom powder. Mix gently.
- Gradually add the milk until a soft dough forms. Avoid over-kneading the dough.
- Line a baking tray with parchment paper.
- Divide the dough into small portions, roll into balls, and gently flatten them.
- Bake for 15–17 minutes, or until the cookies are lightly golden on the bottom. For crispier cookies, bake for an extra 1–2 minutes.
- Cool the cookies completely on a wire rack before storing them in an airtight container. They stay fresh for 7–10 days at room temperature.
Tips for the Best Cookies
- Prepare the nuts and seeds powder by lightly dry roasting almonds, walnuts, pistachios, pumpkin seeds, sunflower seeds, sesame seeds, or your favorite mix. Let them cool before grinding into a coarse powder.
- You can replace the jowar and oat flour with ragi flour for a different flavor and added nutrition.
- Add the milk gradually to avoid making the dough too soft.
- Do not over-knead the dough, as this helps keep the cookies tender.
